Cold smoking surrounds the food with smoke, but never lets the temperature get really hot. The food therefore stays ‘raw’, so it’s ideal for products that would melt under high temperature, like smoked butter, cheese or cold salmon. Food can also be cold smoked for flavour and to help preserve it, and then cooked at a later date, liked smoked bacon.

Whichever option you go for, though, the flavours and textures you get from smoked food are hard to beat.
